The Therapeutic Properties of Nettle

Antihistamine. Reduces gastrointestinal disorders. Diuretic – Beneficial for the kidneys. Reduces hypertension, strengthens cardiovascular health, contributes to skin health (and against conditions such as acne, eczema, etc.), protects prostate health, regulates blood glucose, boosts the immune system, and is antioxidant & anti-inflammatory. An excellent choice, therefore, for recipes, and its aroma does not overpower.

We start with our beans, having soaked them for 24 hours in water. The 24 hours are essential for our health, and I explain here.

We rinse them after soaking.

And we add filtered water to cover them, plus 2 centimetres.

Place the pot on the stove over high heat until it starts to boil. While waiting, we can chop 1 large onion and 2-3 cloves of garlic (or as much as you prefer). The recipe is flexible. It's good to first crush the garlic with the side of the knife. This way, even during the few minutes of waiting, the therapeutic allicin is activated..

Once the water starts to boil, we can remove the foam that forms. If we have soaked the beans properly with water changes, the foam will be minimal.

After we finish skimming, we will add the garlic and onion...

1-2 teaspoons of turmeric, half a teaspoon of cayenne pepper, and salt and pepper to taste. Reduce the cayenne if you can’t handle spicy foods. However, it is very beneficial for the cardiovascular system and cholesterol.

Add the rosemary. If you have fresh rosemary (even better), add it at the end along with the other therapeutic ingredients. I added it at the beginning because the dried rosemary takes longer to soften.

Stir, cover, reduce the heat to the lowest setting (if your stove has 6 settings, set it to 1 or 2), and let the dish cook until the beans are tender. The cooking time depends on how thick-skinned the beans are, whether they are fresh or old, the variety, etc. So, check gradually after half an hour of cooking.

In the meantime, wash 1-2 tomatoes, peel 2-3 carrots, and cut them into large pieces. Precision is not required.

We will put them in the processor to puree, without adding water, to create a wonderful sauce… perfect for dipping with our low-carb healthy bread.

We will blend them thoroughly so that no chunks remain.

While the dish continues to cook, we will finely chop a bunch of nettle (about the same size as a bunch of parsley you buy, roughly) or a handful of dried nettle, and grate about a tablespoon of sage and dandelion! I’m using dried herbs here because I always have them on hand for the therapeutic treatments I give. If you have fresh herbs, that's perfectly fine!

Check to see when the beans are ready. If you cook using the soda method (I explain bellow), you will notice that the bean skins are no longer thick and tough. Take a bean out with a spoon, blow on it 3-4 times, and you’ll see that the skin splits open. This, along with proper soaking, makes our dish easy to digest and minimizes side effects such as gas, bloating, and pain.

Once the beans are ready, turn off the heat and add the carrot-tomato pureé. Stir and let it cook for 5 minutes with the residual heat in the pot (saving energy at the same time). If you are using fresh nettle, add it now. It softens easily, just like spinach.

After 5 minutes, remove the pot from the heat and add our therapeutic herbs: nettle, dandelion, and sage. The key is not to expose them to boiling temperatures, but to handle them like a medicinal tea, so as not to destroy their properties.

After 10 minutes, we can serve. Personally, I let it sit for at least half an hour before serving. The beans continue to absorb flavours and aroma, and the sauce thickens beautifully.

Once the dish has cooled to a consumable temperature, add fresh lemon to maintain vitamin C, as much as you like.

And extra virgin olive oil (to preserve its therapeutic properties as well).

TIPS

 

  • If we want to avoid puréeing the carrots and tomatoes, we can cut the carrots to our desired size and add them 10 minutes before the dish is ready, and add the tomatoes at the end, along with the other herbs.


  • If we want to speed up the cooking time and make the meal more digestible, we can add a small amount of baking soda at the beginning of the cooking process.

Firstly, it is completely safe for health and alkalizes. I’m not sure what rumours are out there… What it does is break down the pectin in the skins of legumes, which is mainly responsible for intolerances. At the same time, it will neutralize any residual phytic acid (anti-nutrient), which is particularly important in large seeds like butter beans. If you add soda, you will see it fizz immediately, due to the neutralization of acids by the alkali. Stir, and in a few seconds, the foam disappears. It does not affect the taste of the food once cooked.

Some mistakenly believe that adding salt (or baking soda) during cooking will slow down the softening of legumes. The exact opposite is actually true. This is why we add the acids (tomatoes, lemon) at the end.


  • To enhance the therapeutic properties of the recipe, we can add 1 tablespoon of one of the probiotic sauces we have prepared! They provide immune system support, enhance the gut microbiome, protect the body from unwanted bacteria, produce vitamin B12 (yes, vitamin B12 is produced in the gut by probiotic bacteria!), and contain enzymes that facilitate metabolism.

  • To increase our intake of vitamin D, we can add thin slices of raw round mushrooms. They are excellent raw and absorb the sauce immediately. If we expose them to the sun for half an hour, their vitamin D content multiplies!
