As I had promised, in this article we will see how to make a plant-based spicy cheese spread from the probiotic oats that we have already prepared. A probiotic recipe, with many antioxidant-anti-inflammatory elements, good fats, complete protein, minimal carbohydrates, which contributes to detoxification and the boosting of the immune system. Recipe, Properties & Tips.


Avoiding unhealthy ingredients

A recipe without the allergenic proteins that contribute to autoimmune diseases: gluten (from flours), casein, lactose, antibiotics & hormones (from dairy products), harmful additives (from vegan products), soy (allergenic & disrupts hormones by mimicking oestrogen).

Nutritional Value

Vitamins

B (Thiamine, Riboflavin, Niacin, Folic Acid), C, E, A. Vitamin B12 (created in the gut by the probiotic bacteria).

Straight to the Recipe.

Here, I show you quantities for about 100ml. You can adjust it as you like, adding or removing ingredients as you test it. Due to the probiotics, it keeps for a very long time in the fridge, and the taste matures and develops excellently!


Garlic

Finely chop 2 cloves of garlic & put them in a bowl. If you prefer, mash them.

*First, we crush the garlic with the side of the knife, and after chopping it, we leave it for 10 minutes to activate its therapeutic allicin.

Herbs and Spices

Thyme

1 teaspoon

Turmeric

1 heaping teaspoon of turmeric (excellent for arthritis too)

Ginger

One teaspoon

Black Pepper

Half a teaspoon of black pepper (essential for the absorption of curcumin, alone with the olive oil)

Paprika

Half (or less) a teaspoon of smoked paprika

Cayenne

A little cayenne pepper (as much as you can tolerate, excellent for cardiovascular health, the digestive system, the immune system, and blood health). If you don't have any, use chili flakes (boukovo), although it does not have the same properties.

Olive Oil

2-3 tablespoons of good quality olive oil. You can add more at the end if you wish.

*Essential for the absorption of curcumin, along with its nutritional, protective, and antioxidant properties. We always try to invest in good extra virgin olive oil. The best way is to purchase directly from producers. I explain here. I also explain which fats are beneficial and which are toxic here.

Probiotic Oats

3-4 heaping tablespoons of probiotic oats

And mix well

Lemon

Now add as much lemon as you like. It's best to taste as you go, since the oats already have an acidic flavour, similar to yogurt (and aroma).

Salt

The same goes for the salt.

*We always use Himalayan or unrefined sea salt. It provides us with many minerals and electrolytes.

*Types like "table salt", etc., are not salt.

*Salt is not as harmful as was believed some years ago — regarding blood pressure, etc.

The taste

Honestly, you will be surprised by how velvety its texture is (it doesn’t resemble flour), and by its natural cheese flavour (tirokafteri in Greek), with its aromas, and how satisfying it is for our appetite, due to the high fibre content that keeps us full for hours!


Thus, there is no need for anyone to give up the cheesy taste, nor to resort to products that are hardly food, made from gluten and toxic chemicals..!

TIPS


  • You can add fresh, finely chopped herbs to accompany your recipes, such as:

Dill and/or fennel, for fish and shellfish.



  • Nutmeg, clove, allspice, for more wintery dishes.


  • Other herbs that pair wonderfully are: rosemary, oregano, marjoram (lovely), tarragon.


  • To enhance its therapeutic effect, add dried nettle and/or dandelion.


  • For your pasta, you have an excellent sauce if you dilute it with a little stock or simply some water.


  • A fantastic addition to soups, to boost them with probiotics and beneficial elements.


  • Oats, beyond their health benefits, also provide a very velvety texture. You can experiment with other flours as well. Under no circumstances do we use wheat. I explain here.



*When using probiotics in your food for their benefits, never heat them, as the bacteria can tolerate up to 40-45°C, and you don’t want to destroy them. The same goes for extra virgin olive oil. Add them to your dish when it’s at a tolerable temperature for consumption.
